Our Mac beta software did allow concurrent SlingPlayer instances. However, it was unintentional and the preferences/settings were shared between players - potentially resulting in file corruption. I wonder if you had some remnant beta software which was recently overwritten as this shouldn't be related to the recent firmware update.
Having said that, we are very interested in learning the types of functionality folks would like to see in future versions of SlingPlayer and appreciate your feedback. Multiple instances are under consideration as our Mac project manager wrote in another thread:

FWIW, we at Sling agree with you in that we recognize the value of being able to watch two (or more!) slingboxen at the same time if you have the bandwidth.
We couldn't support it in the Mac player 1.0 but we hope to in future versions, priorities and schedule permitting.
